    The matured pork cheek "Il Poggetto" comes from the jowl with rind of 100% Italian pork (Emilia Romagna, Tuscany). It is hand-processed, salted, seasoned and left to mature for at least 3 months in our plant in Poggio a Caiano, Tuscany. The spice coating enhances the softness inside and gives the pork cheek its rich, aromatic taste. We prepare it according to the Tuscan method: granulated garlic, cloves and ground pepper are the aromas that give the Italian pork cheek "Il Poggetto" its character. How to use it: Matured pork cheek is a versatile ingredient for cooking. Sautéed in a pan, it releases its decisive aroma and aromatic fat that make the difference in first courses. It is also enjoyed in thin slices as a cured meat for platters, accompanied by bread and cheese.
